Ingredients (for grinding the moong dal) 1 cup moong dal/yellow dal 1/2 inch ginger 1/4 cup water (for the dough) 3/4 - 1 tsp pink himalayan salt 1/4 tsp black pepper powder 1 tsp red chilli flakes 1 tsp kasuri methi/dry fenugreek leaves 1/2 tsp ajwain/carom seeds 1 cup 4 tbsp atta/whole wheat flour 2 tsp cold pressed peanut oil (for the sata/slurry) 2 tbsp arrowroot 1.5 tsp desi ghee/clarified butter (for the namakpare) dry whole wheat flour as needed oil as needed cold pressed mustard
