Jason Bellchamber shows the steps on how to pen and ink a 6th century Saxon Wolf design from a gold sword hilt. The hilt was found in June 2009 along with over 3000 other pieces from the Staffordshire Hoard. Saxon is not Celtic, however it does predate (and influence) recognizable animal patterns in Celtic Artifacts like the Book of Durrow, Book of Kells and the book of Lindisfard.
