Pour the hot water over the dates and let them soak for 3 or 4 minutes. This will help soften them. Strain the dates reserving the water for later use. Place the dates into a blender or vitamix and add the coconut cream/milk, the vanilla extract, maple syrup and a pinch of salt. Blend and scrape down the sides of the blender as needed. Add spoonfuls of the reserved water a little at a time until you get the desired consistency. Thicker is better for dips and thinner is better for ice cream toppings.
