Follow me : Twitter : Facebook : Instagram : Roasted Eggplant Soup 2 large eggplants (or 4 small) 1 medium onion — peeled and chopped 1 large sweet potato — peeled and chopped 3 medium carrots — peeled and chopped 1 tablespoon curry powder 6 cups of water Salt Pepper Oil Heat your oven to 400 F (200 C). Wash and stem the eggplants. Poke holes in them with a fork. Place them in a roasting pan and roast for about 45 minutes. Remove the roasted egg plant from the oven and cool down. Peel and set aside. Heat some oil in a large pot and add the onion, sweet potato, carrots and curry. Stir to mix well and cook for about 5 minutes. Add the water and season with salt and pepper. Cook for about 15 minutes — until you can easily half the carrot with a knife. Add the eggplant to the pot, mix and cook for about 10 minutes — until the carrot and sweet potato are completely cooked. Tuen off the heat and blend. Taste for salt and adjust. Serve with croutons (recipe below). FOR THE CROUTONS: 3 slices whole grain bread Olive oil Garlic powder Oregano Cumin Salt Mix all the ingredients in a bowl making sure to coat all of the bread. Heat a skillet and add the bread. Cook, stirring occasionally, until toasted on all sides. You can make these in advance and keep them in an airtight container for up to a week.
