Recipe Ingredients **Salad** - Cooked chicken - Cos lettuce - Croutons - Crispy streaky bacon - Boiled eggs - Parmesan cheese - Dressing **Dressing** - 1 egg yolk - 2 tbsp grated parmesan - 4 anchovies - 1 tbsp Dijon mustard - 100ml olive oil - 100ml grapeseed oil - Juice of half a lemon - 1 clove garlic, finely grated - 3 turns of the pepper grinder **Method for the dressing** 1. Smash the anchovies so you don’t get large lumps. 2. In a bowl mix everything apart from the oil and lemon juice. 3. Pour in the oil one quarter at a time and mix until homogenous before adding the next amount of oil. 4. Finish with lemon juice and check your seasoning at the end. **Method for the salad** 1. Dress your cos lettuce with the dressing. 2. Arrange the croutons, bacon, chicken and boiled eggs on top. Grate some parmesan on the top. 3. Enjoy!
