Budz – is a famous kind of the Carpathian cheeses, regarded as a delicious food product in the Hutsul region and in Ukraine overall, a well as in Europe. They make budz in the Carpathian highland pastures, called polonyna, according to a specific cooking technology that Hutsul people pass from generation to generation for many decades. In this video, we will show you the process of budz production on the highland farm in the Carpathian Mountains, located 1600 m above the sea level. Budz is made from fresh cow’s milk. A specific feature of budz refers to the process of cheese smoking, from four to seven days. Smoked cheese heads obtain a unique taste and look like loaves of bread.
