Turkish coffee is way better than Pour Over. You don't waste any coffee to dial-in the recipe. And can brew smaller doses (like 8g instead of 15g). Here are important changes for brewing Light Roast coffee in Cezve. Which will work extremely well with expensive coffee like Geisha. Like usual, use smallest grind size (I use 1-2 clicks on Comandante C40). Secondly, decrease overall dose. I used 100ml of water for 120ml cezve. Now I'm using 80ml. So just use 30% less water of total volume of Turkish coffee pot. It'll give you ability to have third thing: controlling of foam motion, not only color. Because it starts to become tricky to brew light roast over medium roast. It takes longer to change the color of foam. And the easiest thing I found to control the coffee - foam motion.
