Eggplant can be kept in the refrigerator's crisper drawer for about three days, but try to cook it as soon as possible. Keep the skin on when cooking eggplant to keep the flesh intact. Soaking the eggplant in saltwater prevents oxidation, extracts the bitterness, and keeps it from absorbing too much oil.
