Simple and peaceful countryside life in early spring - visiting an arboretum, making a rhubarb crumble and enjoying the slow, simple living in English countryside. Rhubarb Strawberry Crumble recipe: 2 large rhubarb stalks (I used forced rhubarb which is currently in season in England.) 200g strawberries 90g brown sugar 2 tbsp 100g plain flour 100g rolled oats 90g butter A pinch of salt 1 tsp Cinnamon 1 tsp Vanilla extract Peel the skin off the rhubarb. Cut rhubarb and strawberries into thin slices. Add into a pot with 2 tbsp of sugar, cinnamon and vanilla. Let it simmer until most of the fruit pieces become mushy, jammy consistency. Take off the heat and set aside. Preheat the oven to 180C/ 356F. In a bowl combine flour, oats, 90g of sugar and salt. Then add cold, chopped butter. Mix well by hand, rubbing slightly to form a coarse crumb. Pour your fruit mix into an ovenproof tray. Sprinkle the crumb on top. Bake for 20-25 minutes until the top becomes slightly golden.
