Put the apples in a jar, not reaching the neck (to the shoulders), pour 1.5 liters of water, cover with a cloth napkin and leave to ferment for about 10 days. Stir the apples several times a day, releasing gases. After the apples stop fermenting, strain them, squeeze out the pulp well. Pour the juice into a clean jar, add 1-2 tbsp of honey and leave for at least 6 weeks. Put the jar in a dark place, having previously covered it with a cloth. Do not touch the jar with apple cider vinegar anymore. After 6 weeks, the vinegar should become clear, sediment should form at the bottom, and the apple mother should be on top.
