Kahi is one of the most famous pastries in the Iraqi kitchen, and it is an old food that people stop asking for in front of bakery shops, especially in the morning period during the holidays, in order to eat it during their breakfast, and they usually eat it with Iraqi Qaymar. the components 1 or 2 cups of flour, 1 or 1.5 cups of warm water, 0.5 teaspoon of salt, 0.5 half cup of oil or melted margarine. It is prepared first by sifting flour and mixing it with salt, then adding warm water and kneading the dough for 10 minutes, then covering it and letting it rest for 15 minutes. Roll the dough in the form of a roll, cut the dough into 7 equal pieces, cover the pieces with ghee or oil and leave them to rest for 30 minutes. Spread each ball on a flat surface very thinly with the help of ghee, then add a tablespoon of melted butter. After stretching it, it is spread on the piece, then it is folded on both sides in a rectangular shape, then it is also folded from the other two sides so that it becomes square, and so on until the amount is complete. Leave the squares on a greased tray to rest for 15 minutes. Spread each piece of roast with light and quick pressure from both sides, and place it on a tray lined with butter paper, and let it rest for 15 minutes. Enter the oven at 200 degrees from the bottom for 10 minutes. As soon as it comes out of the oven, it is watered with cold syrup and served.
