June has been warm, and this gave me the opportunity to start in making the first steps into a food garden. So we can become more self sustaining. Life here in north Sweden is Beautiful surrounded by forests, lakes and silence. Also it has been 2 YEARS now since we move to northern Sweden, Oh time goes by soooo fast. The Nettle Soup: A immune boost, detoxic, digestive improving, source of minerals and vitamines for a strong body. You need: 225 gr of young stinging nettle leaves 50 gr of butter or olive oil 450 gr onions cut into pieces 2 garlic cloves cut into pieces or pressed 1 ½ liter of broth chives salt and pepper Wash the nettles, melt the butter in a pan and gently fry the onions on low heat for about 10 minutes (do not let them turn brown). Add the garlic and let it fry for 2 minutes. Add the nettles and the broth and bring to the boil. Let the soup simmer for 5 minutes, then purée the soup with a hand blender or in a food processor. Season
