Happy cooking and wishing you a wonderful day! 😊 💖 ℹ️ This sweet potato dish serves 4. 💬 Let me know in the comments if you enjoy my vegan recipes. ❤️ SUBSCRIBE to see new recipes: 🥣 Ingredients: 4 sweet potatoes 1/2 head of small red cabbage 1tbsp lemon juice salt to taste 100g | 1/2 cup cooked beans (you can use any beans you prefer and have available) 1tbsp pumpkin seeds pickled jalapeños 1/2tsp Korean red pepper chilli flakes (Gochugaru) 2-3tsp olive oil 🥣 Ingredients for avocado guacamole: 1 medium size avocado 1tsp lemon juice salt for seasoning Korean red pepper chilli flakes (Gochugaru) 🧑‍🍳Cooking tips: ❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour. ❗ If you do not have Korean red pepper chilli flakes (Gochugaru) you can substitute it for crushed red pepper flakes or cayenne pepper. 🥣 Method: Poke holes in sweet potatoes with a fork. Set sweet potatoes on the baking dish and roast in the preheated oven at 425F | 220C for 40 minutes. ℹ️Alternatively you can cook sweet potato in the microwave or air fryer. Cut 1/2 head of small red cabbage. Add 1tbsp lemon juice. Season with salt. Add 100g | 1/2 cup cooked beans, 1tbsp pumpkin seeds, finely chopped pickled jalapeño. ℹ️ If you like you can skip jalapeño. Add 1/2tsp Korean red pepper chilli flakes (Gochugaru) and 2-3 tsp olive oil. ℹ️ If you do not have Korean red pepper chilli flakes (Gochugaru) you can substitute it for crushed red pepper flakes or cayenne pepper. Remove sweet potatoes from the oven and let them cool down. Mash 1 medium size avocado. Add 1tsp lemon juice and season with salt. Slice sweet potatoes lengthwise. Add cabbage filling and top with guacamole. Sprinkle with Korean red pepper chilli flakes (Gochugaru) - optional.
